Coconut Custard with Fruit Cocktail. An amrbrosial dessert that melts in your mouth.
Serves 2 To   8
Ingredients
| Amount | Ingredient |
|---|---|
| 1 tsp | Pure Vanilla Extract |
| Two (2) – 12oz cans | Evaporated Milk |
| One (1) 12oz can | Coconut Milk |
| One (1) – 12oz can | Fruit Cocktail |
| 1/2 Tsp | Cinnamon Powder |
| 3 pks | Gelatin |
| 1 inch | Lime Zest |
| to taste | Sugar |
Dissolve the gelatin in 3/4 cup of boiled water. Place evaporated milk in a large saucepan. Add sugar to a taste then bring to a boil. Add cinnamon powder, vanilla extract, and lime zest to mixture. Add the gelatin to milk mixture. Then add coconut milk and add sugar to a taste. Drain fruit cocktail and add to mixture. Mix well and place in a large bowl . Refrigerate for at least a 6 hours prior to serving.
