Accra – by Beluchi Jeannot

A delightfully crunchy appetizer that is a great opener for any event .
Serves 4  To   12

Amount Ingredient
1 Small chopped Onion
2 Garlic cloves
1/2 Cup Vegetable Oil
1 Egg
2 cups Grated Malanga
1 Teaspoon Finely chopped Parsley
to taste or 1 Tbsp. Salt
1 Tbsp Flour
1 or1/2 Tsp Crushed hot pepper or sauce
Mix all the ingredients, except oil, in a large bowl.
Let batter rest for one hour.
Pour the batter by spoonfuls into a pan of heated oil. Fry on med high heat until golden brown on both sides.
